Madre’s gorgeously undiluted and unfiltered Tequila is made in the Jalisco highlands of San Julián, at the Padilla palenque, run by one of the few families committed to crafting additive-free, old-style Tequila. The agaves are harvested from a single estate in Los Altos, located at some of the highest elevations in Jalisco, about 2,250 metres above sea level—tough conditions that result in the complexity and sweetness that the highest quality tequilas are recognised for.
Harvested, only after the agaves first show enrocimiento, a reddish colour in their leaves that signals they are nearly at peak ripeness, they are roasted in clay brick ovens and then distilled using mineral-rich well water drawn from nearly 1,500 feet below the surface. Unusually for a category commonly manipulated using artificial sweeteners and glycerine, this Tequila’s sole ingredients are ripe blue weber agave, natural yeast, and volcanically filtered well water.
With a velvety mouthfeel, even at a still strength 48% alcohol (most tequilas are diluted to 38-40%), Madre Tequila offers a full-bodied, sweet agave flavour that can shine through in a wide range of cocktails, or be savoured when sipped neat. Aromas of raw agave with a hint of citrus evolve on the palate into notes of caramelised agave and layers of earthy minerality.
