      Timo Mayer’s approach to Cabernet is far from traditional. Using 100% whole-bunch fermentation, this wine offers a vibrant, aromatic, and savory expression that defies expectations for the variety.

      The 2024 vintage benefits from a warm, consistent ripening season, adding a bit more richness to the wine. The nose is dominated by dark fruit, crushed herbs, and subtle hints of tobacco, while the palate is smooth, plush, and structured, with fine tannins and a mineral graphite finish.

      Unlike classic Cabernets, which often rely on oak for structure, this wine derives its framework from the skins, stems, and seeds, resulting in a fresher, more accessible drinking experience.

    In 1999, Timo Mayer established Mayer on the slopes of Mt Toolebewong, Healesville, with his partner Rhonda Ferguson. Also head winemaker at Gembrook Hill Vineyard, Timo makes his own wines from a 2.6 hectare plot on the vineyard, named 'Bloody Hill', because of the effort to walk up and down it every day.

    Timo interferes as little as possible in the growing and winemaking process, and the red wines are unfined and unfiltered to show the real expression of the land. The Mayer Close Planted Pinot Noir was listed in some of the hottest, bio-driven wine lists in London. Mayer exports to the UK, Germany, Denmark, Singapore and Japan.
