Tasting Notes

Zingy, Bold, and Unapologetically Native

Wild Citrus is what happens when gin meets the Australian bush and they have a high-proof love affair. At 48.3%, this bottle packs a punch – not just in strength, but in personality.

The nose bursts open with finger lime, blood orange, and lemon aspen – wild, tart, and electric. Behind it: earthy coriander seed, pink peppercorn, and a whisper of native mint. It smells like the edge of a rainforest after rain.

On the palate: zesty and peppery with massive citrus lift. Think grapefruit pith, lemon sherbet, and lime oil wrapped in resinous juniper and dry spice. There is real body here – oily, expressive, and made to cut through tonic or shine in a stiff martini.

Mid-palate brings a wave of warm spice, crushed herbs, and a savoury citrus peel depth. The finish is long, mouth-watering, and fragrant. Wild Citrus is gin dialled up to 11 – and it works.

Distillation & Provenance

Crafted only for our premium spirits

Distillation

5Nines Distilling produces its Wild Citrus Gin using a base grain spirit redistilled in the distillery's custom-built copper pot still with a selection of botanicals led by South Australian wild and native citrus varieties. The botanical infusion process captures volatile aromatic oils from citrus peel, complemented by juniper and supporting botanicals that provide structure and balance. The spirit is cut with pure water to a bottling strength of 48.3% ABV — higher than many commercial gins — which preserves aromatic intensity and provides a robust character suitable for cocktails or neat consumption. No artificial flavourings or colourings are used.

Provenance

5Nines Distilling is a small-batch craft producer founded in the Adelaide Hills of South Australia in 2016 by David Pearse and Steven Griguol. While the distillery built its reputation on experimentally casked single malt whiskies, its spirits range extends to include gins that highlight South Australia's distinctive wild botanicals. The Wild Citrus Gin draws on native and wild citrus varieties found in South Australia's diverse landscape, from the Adelaide Hills through to the state's citrus-growing regions. 5Nines distils all spirits using their custom-built copper pot still, applying the same rigorous, small-batch approach to gin production as to their whisky programme.

About this Spirits

South Australia

If you like Australian wine, then you probably like South Australia wine. The rich reds produced there put Australia on the wine-making map of the world. With over 40% of the countries vineyards, South Australia can rightfully call itself the wine state.

Wines are produced in several regions throughout the state, though many are naturally grouped together, like Barossa and Eden Valleys, only 15 minutes apart. They include such regions as Barossa Valley, Clare Valley, Eden Valley, Coonawarra, Adelaide Hills, Kangaroo Island, Langhorne Creek, The Limestone Coast, McLaren Vale and Wrattonbully to name but a few!

Barossa Valley boasts some of the oldest vines in Australia dating back to 1843 and produces some of the world's finest Shiraz, whilst the 'terra rossa' soils of Coonawarra is most suited to producing outstanding Cabernet Sauvignons. If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
