Tasting Notes

After 6 years aging in oak barrels in the great tradition of aged HSE rum, this vintage agricole rum has spent an additional 12 months maturing in Highland Single Malt whisky barrels. The initial bouquet opens with menthol aromas which give way to white flesh fruit. Swirling awakens subtle hints of green almond and orange blossom. The flavour’s refreshing attack allows notes of smoked oats, nectarines, mint humbugs and spices typical of aged rhum to develop.

Distillation

HSE Vintage 2005 Highland Whisky Cask Finish is an AOC Martinique rhum agricole distilled from fresh sugarcane juice in 2005 at the Gros-Morne habitation. Following the tradition of Martinique agricole production, the freshly extracted cane juice is fermented and then distilled in a Creole column still to produce a grassy, herbaceous new-make spirit. The rhum was aged for approximately six years in traditional oak barrels before being transferred into casks from a Highland single malt Scotch whisky distillery, where it continued to mature for over a year. The Highland cask finish adds honey, dried fruit, and subtle smoke character to the base agricole spirit. Bottled at 44% ABV.

Provenance

Habitation Saint-Étienne (HSE) is a rhum agricole producer based in Gros-Morne in the north of Martinique, French West Indies. The habitation has its roots in the 19th century and today operates as part of the Spiribam group, owned by the Hayot family. HSE holds AOC Martinique status, guaranteeing that its rhums are distilled from fresh sugarcane juice — not molasses — grown on the island. The distillery is known for its World Finishes series, in which aged rhums are transferred into casks previously used for premium Scotch whisky, wine, and other spirits — a programme that has produced critically regarded expressions combining Martinique agricole character with European cask influence.
