Founded in 1840, Simonnet-Febvre is one of Chablis’ historic domaines and the region’s only traditional producer specialising in both still and sparkling wines. Its Chablis showcases the classic Kimmeridgian limestone terroir that gives the appellation its distinctive mineral character.

Crisp, elegant and refreshing, it offers citrus, green apple and flinty mineral notes with bright acidity—an effortless match for oysters, fresh seafood, goat’s cheese or simply a chilled glass on a warm day.

Tasting Notes

Simonnet-Febvre Chablis Millésime 2011 expresses the pure, mineral-driven character of classic Chablis from one of the appellation’s historic domaines. Founded in 1840, Simonnet-Febvre is Chablis’ only traditional producer specialising in both still and sparkling wines.

Made from Chardonnay and shaped by the region’s renowned Kimmeridgian limestone terroir, this elegant vintage offers vibrant citrus and green apple flavours layered with distinctive flinty minerality. Bright acidity and a crisp, refreshing finish bring balance, finesse and energy to every glass.

Sourced from a premium private cellar, this mature Burgundy white wine is a refined choice for pairing with oysters, fresh seafood, shellfish, delicate white fish and goat’s cheese. Serve well chilled to appreciate its freshness, precision and classic Chablis character.

Critic Scores

Pale straw colour with a green hue. Good purity with aromas of chalk, fresh pear, lime, crushed almond and lemongrass. The palate shows good volume and bite with a bright acidity, fine layers of crisp young fruit, textured with a salivating freshness leading to a long and lingering finish, well built with great potential.

An elegant expression with overripe lemons, Anjou pear, white mushroom and wet stone on the nose. The palate is refined with soft minerality that perfectly balances its citrus profile. Delicious and enjoyable now
