Tasting Notes

In 1865, inspired by the decorative handle of his office window, Maurice Hennessy created the star symbol that he would use to classify his cognacs. Thus was born the Three Star Cognac, better known today as V.S. Hennesey V.S. is a blend of more than 40 eaux de vie from the four premier growing areas of the cognac region.

Brassy gold with gold hue. Moderately aromatic nose yields subtle aromas of dried fruits, old wood and pepper. An off dry, medium to full bodied palate offers flavours of boiled confectionary and dried fruits with a peppery kick, before a drying tannic finish sets in. Reasonable aftertaste of pepper and sweet leather with a touch of caramel and tumeric. The standard in entry level Cognac.

Distillation

Hennessy VS (Very Special) Cognac is a blend of more than 40 eaux-de-vie, each aged for a minimum of two years in Limousin or Tronçais French oak barrels at Hennessy's Cognac cellars. Eaux-de-vie from all six Cognac growth areas contribute to the VS blend, with each component double-distilled in Charentais copper alembic stills according to the AOC Cognac requirements. The VS classification designates that the youngest spirit in the blend is at least two years old. A consistent, fruit-forward entry-level cognac with notes of apple, pear, and light oak, blended and assessed by the Hennessy tasting committee in Cognac. Bottled at 40% ABV.

Provenance

Hennessy was founded in 1765 by Richard Hennessy, an Irish officer who had served in the French army and settled in Cognac, Charente. The house grew through the 19th century to become one of the world's largest cognac producers and is now a founding member of the LVMH group. Hennessy sources eaux-de-vie from across all six growth areas of the Cognac region — Grande Champagne, Petite Champagne, Borderies, Fins Bois, Bons Bois, and Bois Ordinaires — and maintains a library of over 350,000 barrels in its Cognac cellars. The blending tradition at Hennessy has been held by the Fillioux family for eight successive generations.
