CERTIFICATION :
Pommeau de Normandie AOC (Certified designation of origin).

AGEING :
Between 36 to 48 months in oak barrels.

ELABORATION :
Pommeau de Normandie is made by the mutage of:
- 2/3 of apple must made from varieties as Fréquin Rouge, Binet Rouge, Bisquet et Douce Moën.
- 1/3 of one-year-old-Calvados Pays d'Auge, that titrates between 68% and 70% alcohol.

Pommeau ages 36 to 48 months in oak barrels (14 months minimum authorised by the legislation).

TASTING :
Bright and clear, a beautiful amber colour. Reveals subtle aromas of cooked fruit, dried fruit, prunes, cherry and also almond cocoa and honey.

SERVING SUGGESTION :
Pommeau de Normandie can be served :

- As an aperitif, the ideal temperature to appreciate it is between 8 and 10°C
- During the meal, as an accompaniment of foie gras, apple or chocolate dessert.
- For cooking, it can be used from starter to dessert, to make sauces or with poultry, fish and scallop.

PRESERVATION :
Pommeau de Normandie can be preserved 1 to 2 years in the bottle and 6 months after the opening.

Distillation

Pommeau de Normandie is an AOC-regulated blend of fresh Norman apple juice and young calvados — produced by Maison Pierre Huet at their Cambremer estate in the Pays d'Auge, Normandy. The Pommeau is made by blending unfermented fresh-pressed apple must from the estate's orchards with calvados at a ratio that produces a naturally sweet, moderate-strength drink of approximately 17% ABV — the alcohol in the calvados halts fermentation of the juice, preserving its fresh fruit character. The blend is then aged for a minimum of 14 months in oak barrels under AOC Pommeau de Normandie rules, during which it develops apple compote, dried apricot, vanilla, and gentle oak complexity. Pommeau is traditionally served chilled as an aperitif or dessert accompaniment.

Provenance

Maison Pierre Huet is one of the oldest Calvados estates in France, with the Huet family producing and selling calvados, cider, and Pommeau de Normandie since 1865 in the heart of the Pays d'Auge — the most highly regarded calvados sub-appellation. The estate is located on the Route du Cidre in Cambremer, Calvados, between Caen and Lisieux, and comprises 30 hectares of orchards planted with traditional Norman apple and pear varieties. The estate is now in its fifth generation, led by François-Xavier Huet. In a unique practice, the Huets heat their distillation stills using wood chips sourced from their own orchards.
