      Description: 
      Intense ruby red colour with violet hues; the aroma is reminiscent of ripe fruits such as cherries, sour cherries, prunes, blackberries and blueberries. In the mouth it is smooth and balanced with an aftertaste of spices, black pepper, cinnamon and liquorice. 
      This wine can only be called Amarone if the harvest and the quality of the grapes comply with the specifications and if the drying process takes place naturally.

      Grape variety: 
      Corvina Corvinone Rondinella Croatina - Amarone della Valpolicella DOCG

      Production area: 
      Valle di Marcellise, at the foot of the hills at 100 m above sea level. The vineyards grow on hillsides facing north-south. The soil is calcareous with the presence of clay and stones; organic fertilisation is carried out every four years with the addition of microelements as required.

      Vinification: 
      The grapes, harvested in September, are stored on reed and wood racks until mid-December/early January in well-ventilated rooms, without the use of artificial air conditioning or dehumidifiers. After pressing, the must is placed in steel barrels where it remains for 40-50 days with the addition of natural ferments and according to special processing methods. The wine is then racked into Slavonian oak barrels (350 litres) where it is aged for approximately 36 months.

      Food pairing: 
      Goes well with red meat dishes, mature cheeses or at the end of a meal.
