Tasting Notes

Michel Couvreur Sour'Hum Single Cask High Esters Rhum 2013 is a masterclass in artisanal craftsmanship, marrying Belgian expertise with Caribbean tradition. This exceptional rum is distilled in the Caribbean and aged in Burgundy, France, showcasing a rare fusion of climates and techniques that result in a spirit of remarkable depth and complexity.

Bottled at a natural strength of 50.50% ABV, this limited edition release comes from a single cask aged for 12 years in extremely old Pedro Ximénez (PX) barrels. The prolonged maturation in these rare sherry casks imparts an intense aromatic profile, rich with dark, surprising notes that evoke pastry and tangy flavors. The unfiltered presentation preserves the rum’s raw character, offering a bold and persistent sensory experience that is truly incomparable.

With only 770 bottles produced, this 2013 vintage embodies Michel Couvreur’s passion for authenticity and quality. The gravity-based distillation process and meticulous barrel selection contribute to its distinctive high esters profile, delivering a complex nose and palate that evolve beautifully with each sip.

This Sour'Hum is an exquisite example of how traditional aging techniques combined with innovative spirit crafting can elevate rum to new heights. Its deep, layered flavors and powerful aromatic intensity make it a prized addition for connoisseurs seeking a unique, artisanal rum experience.

Distillation

Michel Couvreur Sour'Hum Single Cask High Esters Rhum 2013 is a single cask rum sourced from a Caribbean distillery producing high-ester distillate in 2013, then matured in a single cask in the Couvreur cellars at Bouze-lès-Beaune, Burgundy. High-ester rums are produced by extending the fermentation period to generate higher concentrations of esters — the aromatic compounds responsible for intense tropical fruit, overripe banana, and funk notes characteristic of Jamaican-style distillates. The Burgundian cellar maturation in a single sherry-seasoned cask integrates these esters and develops depth and complexity. Bottled at natural cask strength, without dilution or filtration. 50.5% ABV.

Provenance

Michel Couvreur was a Belgian entrepreneur who established a spirits maturation operation in Bouze-lès-Beaune, Burgundy, France, primarily working with Scottish malt spirit matured in sherry casks in his rock-carved Burgundian cellars. Alongside the whisky range, the Couvreur house also sources and matures rum under the 'Sour'Hum' label — a name playing on the word 'rhum' — applying the same philosophy of cellar maturation in exceptional casks to Caribbean high-ester rum distillates. The Sour'Hum expression represents the rum dimension of the Couvreur house's exploration of complex, aromatic distillate character. The brand continues under the stewardship of his protégés.

About this Spirits

Burgundy

Burgundy is undoubtedly the home of the finest Pinot Noir and Chardonnays in the world, where vineyards, or Domaines have been producing wines for over 2000 years. Burgundy is located in the North-east of France, an hours drive from Lyon and 2 hours from Paris. With over 100 appellations, or sub-regions (more than any other wine region) Burgundy is known for being the most terroir-oriented region in the World. The finest red wines of Burgundy are found in the Côte d'Or, a string of villages including Côte de Nuits, Gevrey-Chambertin, Morey St Denis, Chambolle-Musigny, Vougeot, Vosne-Romanée and Nuits-St Georges.

There are flavours present in great Burgundys that are the envy of Pinot Noir producers worldwide. The elusive peacocks tail finish that goes on and on, and the pretty-elegance backed by Burgundy muscle is the goal of winemakers around the globe. The main levels in the Burgundy classifications, in descending order of quality, are: Grand crus, Premier crus, village appellations, and finally regional appellations. For the Chablis wines, a similar hierarchy of Grand Cru, Premier Cru and Village wines is used, plus Petit Chablis as a level below Village Chablis.
