Tasting Notes

Nestled in the Alps' foothills, you'll find Prosecco's finest expression. These verdant rolling hills, covered in vines, produce the most intense and complex wines. So much so that the wine is called Prosecco Superiore.

Conegliano Valdobbiadene Prosecco Superiore DOCG (its full name) is different from regular Prosecco.

Prosecco DOC grapes grow in a very large, flat area. This spans the provinces of Veneto and Friuli-Venezia Giulia (over 89,000 acres or 36,000 ha). Whereas Conegliano Valdobbiadene DOCG is tiny, just 19 x 16 miles (30 x 25 km) across, only 21,500 acres (8710 ha), and very hilly.

PAIRINGS: Excellent as an aperitif, ideal throughout the meal in accompaniment to seafood and white meats. The perlage is fine and persistent and it is dark straw-yellow in colour. The elegant aroma evokes the fragrances of apple and meadow flowers.

It's fabulously expressed on the nose, showing rockmelon, Gala apple, pear and white floral aromas, followed by an elegantly flavoursome palate offering juicy fruit intensity with refreshing acidity, making it delightfully drinkable.

Vineyard Cultivation

Ca'Marian is a Valdobbiadene Prosecco Superiore bottling linked to the Cantina Produttori di Valdobbiadene (Val d'Oca) co-operative, which draws Glera from the steep hills between Valdobbiadene and Conegliano in the Veneto's province of Treviso. These slopes carry morainic and sandstone-marl soils, and the vineyards are worked largely by hand because of their gradient. As a Non-Vintage Superiore the wine reflects a house approach rather than one season: Glera is picked at moderate ripeness to preserve the grape's floral aromatics and bright acidity, and parcels from several sites across the DOCG hills are blended to hold a consistent style from year to year.

Vinification

Grapes are pressed gently and the free-run juice cold-settled before a temperature-controlled first fermentation in stainless steel to retain freshness. The sparkle is created by the Charmat (Martinotti) tank method, with a second fermentation in pressurised autoclave over several weeks so the wine keeps Glera's primary pear, apple and white-flower character. It spends a short time on fine lees in tank before filtration and bottling under pressure. Finished as Extra Dry, it carries a dosage in the roughly 12 to 17 g/L range typical of the style, giving a rounded, gently off-dry palate balanced by the crisp acidity of the Valdobbiadene hills.
