Risky Business is a boutique partnership between viticulturist Rob Quenby and winemaker John Waldron, founded in 2013 and known for sourcing fruit from select vineyards across Western Australia and Victoria - including the renowned King Valley. Their Prosecco expresses this regional diversity, with Glera grapes machine-harvested for freshness and fermented at low temperatures with Champagne yeast to retain vibrant aromatics.

After a brief period on lees, the wine undergoes secondary fermentation in sealed tank via the Charmat method, resulting in a fine, persistent bead. The finished style sits at 10.5% ABV, with 15 g/L residual sugar and balanced acidity (TA 6.1 g/L, pH 3.13). In the glass, delicate aromas of pear, citrus blossom and white peach are matched by a palate that's crisp, lightly off-dry and refreshing, offering notes of fresh pear, stone fruit and a gentle sweetness that never overwhelms. Clean, bright acidity and moderate sweetness make this Prosecco ideal as an aperitif, yet versatile enough for pairing with spicy Asian dishes or light salads. Risky Business delivers a modern, fruit-driven Australian take on Italy's classic sparkling.

Critic Scores

Very light, bright colour with a creamy head of fizz. The aroma is attractively-scented, lightly herbal, faintly almond-like, the palate light and yet intense, crisp and refreshing, with a tickle of sweetness but essentially it's dry. The effervescence is vigorous and the wine is very good in its entirety.

This light and dry wine has subtle hints of fresh pears, stone fruit and citrus blossom, balanced delicately with just the right amount of acidity, a soft and finely textured palate and lively bubbles all combine seamlessly. It's fresh, zesty, light and crisp taste makes it an ideal aperitif on a summer's day

Vineyard Cultivation

Risky Business was established in 2013 as a King Valley venture bringing together vintner John Waldron and grapegrower Rob Quenby. Its Prosecco is grown in Victoria's King Valley, the home of Australian Prosecco, where Glera thrives on well-drained alluvial and clay-loam soils on valley floors and rising foothills. The region's altitude and cool nights give a long, even ripening that locks in the crisp acidity and pear-and-citrus aromatics the style depends on. As a non-vintage wine the Prosecco is built for consistency, drawing chiefly on current-season Glera picked at moderate ripeness to keep the fruit fresh and the alcohol restrained.

Vinification

Glera is harvested relatively early to preserve natural acidity and pressed gently for clean, aromatic juice. After a cool primary fermentation the base wine undergoes a second fermentation in pressurised tank by the Charmat (tank) method, which retains Glera's fresh pear, apple and citrus character rather than building autolytic complexity. It is held briefly on lees, then filtered and bottled under pressure. Finished Extra Dry, it carries a little more residual sugar than a Brut, giving a soft, gently off-dry finish balanced by bright acidity. The contract winemaker for this release NEEDS VERIFICATION.
