The agave piñas are slow-roasted in traditional stone ovens for 22 hours, then crushed with a custom-built handmade metal tahona known as 'Felipestein'. Fermentation occurs naturally using a 50/50 blend of harvested rainwater and natural spring water — tying each batch to the specific terroir of the El Pandillo estate. Following double distillation in copper pot stills, the Blanco is bottled unaged at 40% ABV, preserving the bright citrus, cooked agave, and floral Highland terroir character.
