Tasting Notes
Octomore 16.3 is a bold statement in the world of super peated single malts. It takes the Octomore philosophy one step further by uniting extreme peat levels with a strong sense of place. Malted to 189.5 PPM, this expression comes from barley grown in a single field on Octomore Farm itself, making it as much about terroir as about smoke.
The whisky is aged for five years in a mix of bourbon, Sauternes, and Pedro Ximénez casks, marrying the rawness of peat with the richness of wine casks. It is bottled at 61.6 percent ABV and non chill filtered to retain full character.
On the nose, you find honeyed malt, toasted grain, orchard fruit, and soft smoke weaving through saline minerals and subtle florals. The peat is present but more restrained than one might expect at 189 PPM, allowing space for malt, fruit, and grain to shine.
On tasting, the smoke is bold but intricate. Expect orchard fruit compote, citrus peel, salted caramel, gentle spice, brine, and touches of dark chocolate. The finish is long, layered, and resonant with smoke, fruit, and grain.
