Tasting Notes

Grapes are sourced from the north of Verona, in the hilly vineyards with medium density soil tending to be calcareous, situated in the villages of Negrar, Fumane, San Pietro In Cariano and Marano.

Deep medium ruby red. The bouquet is typical, jammy, with red berries fruits and dried figs notes, balsamic and spicy. The taste is balanced, fine and velvety, fresh and savory, with round tannins and a long end

Vineyard Cultivation

Ca'Della Scala produces Amarone della Valpolicella from vineyard holdings in the Valpolicella zone of Veneto. The region's hillside vineyards benefit from microclimate variation that affects fruit development and sugar accumulation. Grapes destined for Amarone are grown on soils with significant clay and limestone content, which contribute mineral character to the final wine. The 2020 vintage occurred during a warm growing season in Italy, concentrating fruit flavours and supporting the appassimento process that defines Amarone production.

Vinification

The Pianissimo reflects the traditional appassimento production method central to Amarone. Harvested grapes undergo an extended drying period (5–7 months) in climate-controlled facilities, concentrating natural sugars and increasing phenolic ripeness. The dried fruit is then destemmed and fermented slowly at cool temperatures, allowing gradual conversion of sugar to alcohol. After fermentation ceases, the wine ages in large wooden vessels or barrique for a minimum of three years before release, developing the complex dried-fruit character typical of Amarone.

Veneto

Veneto in the north east of Italy, is the 8th largest region in Italy in terms of land mass, and over 90,000 hectares are under vine, of which some 35,000 hectares are DOC, making Veneto the largest producer of DOC wines in Italy. Venetian viticulture dates back to the Roman times, but phylloxera and world wars saw large cooperatives come to the region taking over many smaller vineyards.

The region is protected from the harsh European climate by the Alps, in the north of Veneto, though the cool climate there is ideal for producing Garganega, the main variety in the white wine Soave. To the east, along the Adriatic coast the renowned Valpolicella, Amarone and Bardolino DOC reds are produced. Reds are often blended with multiple grapes although straight varietals like Cabernet Franc can be very enjoyable.

The plains of Piave produce vast quantities of wine, rather than necessarily producing the highest quality wines and up in the Conegliano hills to the north is home to the Prosecco variety, which is growing in popularity, seen as a bargain alternative to Champagne.
