Fleurieu Albatross is the distillery's core continuous-release single malt, named for the wandering storm birds of the Southern Ocean — a tribute to the maritime environment of the Goolwa Wharf Precinct. The whisky is produced from malted barley in copper pot stills at the Fleurieu Distillery, then matured in a combination of first-fill American white oak ex-bourbon barrels and Tawny port barriques. The American oak contributes vanilla and maple-oak sweetness, while the Tawny port barriques add dried fruit, spice, and richness. The salt-laden Southern Ocean air in the maturation environment lends a subtle coastal signature. Bottled at 46% ABV.

Fleurieu Distillery was established in 2013 by Gareth and Angela Andrews in Goolwa, on the Fleurieu Peninsula of South Australia — on the Goolwa Wharf Precinct, where the Murray River meets the Southern Ocean. The Andrews had previously founded the Steam Exchange Brewery on the same site in 2004, before pivoting to single malt whisky production. The distillery's maritime location — exposed to the salt air and humidity of the Southern Ocean — plays a significant role in the maturation character of Fleurieu's whiskies, which are typically rich, fruit-driven, and influenced by the southern coastal environment.
