An evening above Sydney Harbour, five legendary whiskies, one unforgettable experience.

United Cellars invites you to an extraordinary night of rare whisky and fine dining at one of the world’s most iconic restaurants, Quay, located in the Upper Tower of the Overseas Passenger Terminal, with sweeping views of the Opera House and Harbour Bridge.

This is not simply a dinner. It is an exploration of legacy, time and craftsmanship through the lens of one of the most exclusive whisky collections in the world, House of Hazelwood.

Named after the ancestral home of the Gordon family, the lineage behind William Grant & Sons, House of Hazelwood is a vault of ultra-aged, limited-edition Scotch whisky. These are whiskies laid down in secret, held back from the world, revealed only now in tiny allocations.

Across five courses curated by the acclaimed team at Quay, you will experience five rare, storied expressions, each a glimpse into a different era, each impossibly complex and deeply expressive.

Guided by Kirsten Grant Meikle, you will explore this remarkable collection in an intimate setting, immersed in the stories behind each bottle, the heritage of House of Hazelwood and the philosophy of patience that shaped them.

Each whisky is paired with a dish from Quay’s seasonal menu, crafted to mirror its profile and express the elemental elegance that defines this iconic restaurant.

Sunshine on Speyside 39 Year Old
A vibrant, honeyed dram with elegant citrus, floral lift and glowing orchard fruit.

The Tops 33 Year Old
Rich and layered, a Highland blend showing leather, dried fig and exotic spice.

Accelerator and The Brake 33 Year Old
Peated Islay meets soft Speyside in a thrilling contrast of smoke and silk.

The Old Confectioner’s 44 Year Old
Nostalgic and warm, with butterscotch, clove, candied peel and faded oak.

Blended at Birth 57 Year Old
Distilled and blended in 1965, matured for over half a century, a whisky of astonishing depth and length.
