      Nove is a naturally low-calorie, low-alcohol wine.

      A natural maturation process without artificial dealcoholisation results in a wine with ripe aromas and crisp flavours.

      Thanks to the Alpine climate of our valleys, the natural sugar level tends to be lower. Some grapes, harvested earlier and in cooler areas, naturally have a lower potential alcohol content.

      Lively aromas are favoured by sunny days, acidity is preserved by cool nights and - thanks to the Alpine breeze - the ripening of the grapes accelerates without increasing the sugar level.

      The grapes are harvested between the last week of August and the first week of September, immediately crushed and then subjected to a very short cold maceration stage in the press to allow the colour to tinge the must with a fine and elegant rosé hue. This is followed by soft-pressing. The must is then placed to ferment together with selected yeasts at a temperature of 16-18°C.

    Pinot Grigio and Chardonnay are dominant in the Dolomites. They are well known for their floral tones, exotic fruit, ripe aromas and silky smoothness on the palate. Mezzacorona is the largest Italian estate producer of these two varietals. Merlot and Cabernet Sauvignon also have a long history of cultivation in the region. They are vinified in such a way that the varietals’ flavours of forest berries, chocolate and toasted almond are preserved. As the winemakers intended, these wines are crafted to be a perfect complement to Italian and International cuisine. Mezzacorona constantly receives strong ratings, and is renowned for its consistent quality, vintage after vintage.
