Cedar, dried banana bouquet - from oak? Some dusty earthy and spicy aromas. Palate firm and tight, lots of tannin but fine ripe tannin. Lovely wine: this is a surprise packet. Very good balance and sweet fruit, a hint of raisin and prune; lovely drinking

Vineyard Cultivation

Barossa Valley's 1997 season was warm and productive, yielding generous yields from Kalimna's old vines. The vineyard's century-old parcels produced full-bodied, ripe Shiraz with good extract and moderately high alcohol typical of the era. Kalimna's sandy loam soils provided mineral backing and structural complexity. By 1997, Penfolds' vineyard practices combined traditional dry-farming with modern monitoring. The Bin 28 remained the flagship old-vine expression, sought after by collectors for its consistent quality and development potential.

Vinification

Temperature-controlled fermentation was now standard for premium wines. The 1997 fruit was crushed and fermented in open or closed vessels with careful temperature management, typically 20–25°C for extended maceration of 14–18 days. Following fermentation, the wine aged in French and American oak (estimated 35–40 per cent new French), remaining in barrel for 16–18 months. Malolactic fermentation occurred partially in barrel. Regular racking maintained integration and managed volatile compounds. The resulting wine exhibited ripe dark fruit, spice, and structured tannins.

Penfolds

Penfolds was established in 1844 by a young English doctor, Dr Christopher Rawson Penfold. He built a cottage in Magill, on the outskirts of Adelaide with his wife Mary, and it was around this site that vine cuttings from the South of France were planted. Peter Gago joined Penfolds in 1989, and in 2002, he became Chief Winemaker. He leads an incredibly talented and experienced winemaking team who follow the traditions established by Penfolds previous owners.

Penfolds house style wines embrace the idea of multi-regional blending, optimum fruit quality, the use of fine-grained American and French oak and most often, barrel fermentation and maturation. Penfolds has played a big part in the evolution of winemaking in Australia - and across the world. Their biggest viticultural regions include Adelaide, the Barossa Valley, the Clare Valley, Coonawarra, Limestone Coast, and McLaren Vale. In total, grapes are sourced from more than 220 vineyards across Australia and only the best are chosen.
