Medium deep colour. Intense blackcurrant dark chocolate box cedar aromas with roasted chestnut, dukkha notes. Well-concentrated blackcurrant elderberry dark chocolate cedar flavours, fine grainy touch granular textures, underlying roasted chestnut/ vanilla oak notes, finishes chocolaty firm and long. Lovely balanced and supple-textured wine with superb fruit definition and elemental structure. Will need some years to unfold and hum. References Bin 707 and 407 and sits somewhere between in shape and volume. Distinctly Penfolds in style with Napa Valley's hallmark tannin richness.

This new Bin 704 is meant as a “mirror image” of its Australian Bin 407 stablemate. This wine is 100% Cabernet Sauvignon from the Napa Valley, matured for 16 months in all-French oak, 40% new, 60% 1-year-old. There’s authority here. It’s floral and generally seductive but it’s a powerhouse of flavour and tannin; it doesn’t just add to the record, it sets it straight. Roasted nuts, pure blackcurrant, blackberries dripping with juice, cocoa. It’s sheer, strong, substantial and soft at once. This is a wine that leaves no room for doubt. It’s gorgeous. It throws light, fragrant flowers into a gale force of ripe, fresh, succulent fruit. And then the surge of tannin rockets through; rugged; majestic; uncompromised. It’s big, sir. Cabernet is the coastline of wine. Bin 704 from 2018.

Matured 16 months in 60/40% 1yo/new French oak barrels. In what Peter Gago describes in his inimitable fashion as 'the hemispherical inverse of Bin 407' this is a magnificently crafted Napa cabernet that offers allure from day one, yet great promise in years to come. Napa provenance is avowed confidently in a rich, ripe and succulent core of generous blackberry and blackcurrant fruit, even a hint of licorice. Fruit and high-class French oak tannins unite to wonderful effect in a refined and confident structure, meshing harmoniously with fruit and drawing out a very long finish.

Vineyard Cultivation

Bin 704, a premium Penfolds Cabernet, draws from selected Barossa Valley vineyards with soils and climate favourable to Cabernet quality. The 2018 growing season in Barossa Valley was warm and relatively dry, with moderate rainfall and good sunshine hours promoting colour and flavour development. Penfolds' vineyard selection process focuses on fruit quality indicators assessed through phenolic ripeness monitoring. Multi-parcel sourcing ensures consistent assembly of the Bin 704 profile across vintage variation, with careful block evaluation underpinning final wine composition.

Vinification

2018 Bin 704 underwent separate fermentation of individual parcels in temperature-controlled vats, with winemaking protocols adjusted to match fruit ripeness and tannin potential. Pressing occurred after primary fermentation, with individual component assessment before oak maturation. The wine spent approximately 14–16 months in American and French oak (split ratio NEEDS VERIFICATION), with staged tasting and blending conducted during and after élevage to optimise final flavour integration and tannin resolution.

About this Wine

Penfolds

Penfolds was established in 1844 by a young English doctor, Dr Christopher Rawson Penfold. He built a cottage in Magill, on the outskirts of Adelaide with his wife Mary, and it was around this site that vine cuttings from the South of France were planted. Peter Gago joined Penfolds in 1989, and in 2002, he became Chief Winemaker. He leads an incredibly talented and experienced winemaking team who follow the traditions established by Penfolds previous owners.

Penfolds house style wines embrace the idea of multi-regional blending, optimum fruit quality, the use of fine-grained American and French oak and most often, barrel fermentation and maturation. Penfolds has played a big part in the evolution of winemaking in Australia - and across the world. Their biggest viticultural regions include Adelaide, the Barossa Valley, the Clare Valley, Coonawarra, Limestone Coast, and McLaren Vale. In total, grapes are sourced from more than 220 vineyards across Australia and only the best are chosen.

South Australia

If you like Australian wine, then you probably like South Australia wine. The rich reds produced there put Australia on the wine-making map of the world. With over 40% of the countries vineyards, South Australia can rightfully call itself the wine state.

Wines are produced in several regions throughout the state, though many are naturally grouped together, like Barossa and Eden Valleys, only 15 minutes apart. They include such regions as Barossa Valley, Clare Valley, Eden Valley, Coonawarra, Adelaide Hills, Kangaroo Island, Langhorne Creek, The Limestone Coast, McLaren Vale and Wrattonbully to name but a few!

Barossa Valley boasts some of the oldest vines in Australia dating back to 1843 and produces some of the world's finest Shiraz, whilst the 'terra rossa' soils of Coonawarra is most suited to producing outstanding Cabernet Sauvignons. If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
