Tasting Notes

In the glass, it shimmers a pale amber — not flashy, not bold, but quietly inviting. The colour speaks of light oak ageing and gentle warmth, and as the liquid settles, you can already sense that this isn’t trying to be dramatic. It’s simple. Honest. Familiar.

 

The nose is soft and clean — orchard fruit to start, like biting into a crisp green apple just as it begins to turn golden. Pear skin follows, with a light dusting of cinnamon and vanilla pod. There’s a touch of raw almond in the background — faint, but grounding — and a subtle wisp of blossom that lifts it just enough.

 

Take a sip, and it moves easily. The texture is light and smooth, with flavours that sit right in the middle — not too rich, not too lean. Apple, again, comes through on the front palate, followed by a touch of honey and warm pastry. There’s a gentle oakiness around the edges, but it never imposes — more like a soft structure that keeps things from falling flat.

 

As it fades, the finish is delicate, short but pleasant — a quiet echo of fruit, vanilla and spice that doesn't try to linger longer than it's welcome.

Distillation

St-Rémy VSOP is the flagship expression of the St-Rémy French grape brandy range — awarded Brandy of the Year at the London Spirits Competition and rated 92 points by Wine Enthusiast. The VSOP is produced from a blend of ten French grape varieties including Chardonnay, Pinot Noir, Merlot, Gamay, and Ugni Blanc, distilled in continuous copper column stills at the Machecoul distillery and aged in French oak barrels. Master blender Cécile Roudaut describes the VSOP as the keystone and pillar of the St-Rémy range. The expression is bottled at 37% ABV — the lower strength reflects the smoother, more approachable profile of the column-still French brandy style relative to the heavier cognac and armagnac expressions. Available in a 700mL format.

Provenance

St-Rémy is a French grape brandy producer founded in 1886 in Machecoul, in the Loire Valley of western France. The brand sits within the Rémy Cointreau portfolio and is one of France's most internationally distributed French brandies outside the cognac and armagnac appellations. St-Rémy produces its brandy from a blend of ten distinct grape varieties sourced from across France — including Chardonnay, Pinot Noir, Merlot, Gamay, Ugni Blanc, Carignan, Cinsault, Grenache, Syrah, and Cabernet Sauvignon — reflecting the full diversity of France's wine-growing regions. The multi-varietal approach distinguishes St-Rémy from the single-appellation grape brandy traditions of Cognac and Armagnac.

About this Spirits

Cognac

Cognac is named after the town of Cognac in France and is a variety of brandy. It is produced in the wine-growing region surrounding the town from which it takes its name. Ugni Blanc, which is known locally as Saint-Emilion, is the one most commonly used grape to produce Cognac. The region is divided in to six zones, Grande Champagne, Petite Champagne, Bordeies, Fins Bois, Bon Bois and lastly Bois Ordinaire, not to be confused with Champagne, the premier sparkling wine region in north east France.

Strict guidelines must be followed for a distilled brandy to be legally labelled as a Cognac by the Appellation d’origine contrôlée. Only specific grapes are allowed to be used, of which Ugni Blanc is the most common. The brandy must be distilled twice in copper pot stills and aged for a minimum of 24 months in French oak barrels from Limousis or Tronçais.

Blending is very common in Cognacs, and the age is derived from the age of the youngest grapes used in the blend. Cognacs develop and age in a similar way to Scotch Whiskies, though most Cognacs can age much longer than the legal requirement due to the time spent in the French oak barrels.
