Tasting Notes

Peachy fragrance with fresh, floral aromas. Great vibrancy, texture and balance with a creamy mouth feel and notes of pear skin, nectarine and citrus. The finish is clean and crisp without being excessively dry.

Fruit is sourced from a young vineyard on the outskirts of Pordenone in the province of Friuli.

Justin Bubb (Winemaker, Pooley Wines in Tasmania) makes this delicious little Prosecco in Italy then ships it home. Great value and lots of fun to drink.

Vineyard Cultivation

Babo is a Prosecco DOC label produced in north-east Italy from Glera grown across the broad Prosecco denomination that spans the Veneto and Friuli-Venezia Giulia. The variety thrives on the region's alluvial plains and gentle hill slopes, where a temperate climate and a mix of clay, sand and gravel soils suit aromatic Glera. As a Non-Vintage wine, Babo is built for a consistent house style: growers pick Glera at moderate ripeness to keep its fresh acidity and floral, orchard-fruit aromatics, and parcels are blended across sites and seasons rather than expressing a single year.

Vinification

Glera is pressed gently and fermented cool in stainless steel to preserve primary fruit. The sparkle is produced by the Charmat tank method, with a second fermentation in pressurised autoclave over several weeks that retains the grape's pear, green-apple and white-blossom character. The wine spends a short time on fine lees in tank before filtration and bottling under pressure, giving a light, frothy, easy-drinking style. Its precise dosage and sweetness level are not publicly confirmed for this release.
