Vineyard Cultivation

Bannockburn, established in 1974, pioneered premium wine production in Geelong's cool climate. The winery owns estate vineyards on well-draining volcanic soils with day-night temperature swings that encourage slow ripening and acid retention. Shiraz thrives in Geelong's temperate maritime conditions. 1993 was a moderate vintage, relatively cool with balanced rainfall, producing wines of elegant structure rather than overripe power. The longer, slower ripening period built fine tannins and lifted acidity.

Vinification

Hand-harvested fruit was destemmed into open fermenters, with traditional foot-treading and plunging to manage extraction. Fermentation occurred over extended periods, building complexity through extended skin contact. Malolactic fermentation followed, then maturation in French oak for approximately 18 months. The winemaking approach favoured structure and ageing potential over immediate fruit intensity.
