Tasting Notes

The Accidental Red came about in 2022 by…..unforeseen opportunity…..by accident! The Merlot being pressed for Rosé had too much juice remaining to discard to compost and the Shiraz pressings had too much colour for Rosé so in they went together. From 2023 we decided to make the Accidental Red deliberately and to make it better. Merlot berries are fermented with pressed out Shiraz juice, so in effect there is half the amount of skins for the wine volume. A relatively quick wild yeast fermentation (limiting the time on skins) then into barrel for malolactic and six months maturing through the winter. This Red is from premium Macedon Ranges fruit and comes in as a bright, chillable, quaffable, deliberately inexpensive wine. The red cherry juice and stone aromas mix with blueberry depth. Violet and subtle brown spice add gentle complexity. The palate is supple in a mid-weight Pinot-like way with freshness and fine tannins giving a clean, smooth finish. It drinks well now and will drink well for half a dozen years.

Vineyard Cultivation

The Dhillon Accidental Red comes from Michael Dhillon of Bindi Wines, one of the Macedon Ranges' most respected producers, under his more playful, value-focused Dhillon label. Bindi's home is at Gisborne in Victoria's high, cool Macedon Ranges, though the Dhillon reds draw on Merlot, Shiraz and Malbec sourced beyond the estate. What began in 2022 as a blend of surplus Merlot juice and Shiraz pressings has become a deliberate wine, here a 2025 mix of roughly 50% Merlot, 45% Shiraz and 5% Malbec. Farming across the sourced parcels follows Dhillon's careful, low-intervention approach, aiming at a light, fresh, chillable red rather than a powerful one.

Vinification

The wine is made in an easy-drinking, low-intervention style. A quick wild-yeast fermentation is followed by malolactic fermentation and around six months in barrel, preserving bright, primary red-cherry fruit, gentle spice and earthy complexity. Extraction is gentle, giving silky, fine tannins and a light, juicy, mid-weight palate that critics compare to Pinot Noir, with a lingering finish. There is no heavy new oak or extended maceration. Alcohol is around 14%. It is designed to drink well on release and over roughly half a dozen years, and is best served slightly chilled.
