Tasting Notes

This project from the granite soils in the northern end of the Macedon Ranges at 460m above sea level is an exciting addition to our activities. The vineyard was established in 1995 and the fruit has ostensibly been “lost” interstate until new Victorian owners took over in spring 2021. The new regime has quickly invested in the infrastructure and fine-tuned activities and now several top producers are sourcing fruit from this excellent site. The Riesling was harvested in late March and wild yeast fermented in old French oak and matured for six months on fine yeast lees. In the winemaking mind it was important to preserve/respect the vibrancy of the fruit but to also seek further subtle depth of complexity, palate texture and flow. Not too fruity, not too savoury. The nose is complex with musk, blossom, talc, lime and savouriness from lees ageing. The palate is medium weight, fresh, textured, dry and balanced. It’s very delicious now and will gain poise and flow over the next half dozen years.

Vineyard Cultivation

The Dhillon label is a newer venture from Michael Dhillon of Bindi, drawing on a single site at the northern end of the Macedon Ranges near Kyneton, sitting at roughly 460 metres over decomposed granite. The vineyard was first established in 1995 but its fruit was long committed interstate; new Victorian owners took over in 2021 and reinvested in the site, and Bindi is now among several respected producers working the block. Cool-climate elevation and free-draining granitic soils suit Riesling, giving slow, even ripening and firm natural acidity. The 2025 Macedon growing season is not fully documented here, so seasonal specifics are noted as NEEDS VERIFICATION.

Vinification

The Riesling was picked in early April to hold onto acidity and aromatic detail. Rather than a purely reductive tank treatment, the fruit was wild-yeast fermented and matured in older French oak for around six months on fine yeast lees, a choice aimed at adding subtle texture and depth without overriding the vibrancy of the fruit. The result is styled between fruit-driven and savoury, finishing dry, chalky and long. Malolactic and any residual-sugar details are not confirmed here and are flagged NEEDS VERIFICATION.
