Fruit parcels were night harvested to preserve freshness, quality, and the vibrant, bright characters of this wine. Free run juice is used to create a fine palate structure; to preserve the natural fruit aroma the wine is then cold fermented.

Vineyard Cultivation

BTW is a South Australian sparkling built on the classic pairing of Pinot Noir and Chardonnay. The listing places the fruit in South Australia without a named subregion; cool-climate sites within the state, such as the Adelaide Hills, typically supply the early-picked, high-acid fruit these varieties require for sparkling base wine. As a non-vintage wine it is assembled to a repeatable house style rather than expressing a single season, drawing on Chardonnay for citrus drive and Pinot Noir for structure and red-fruit weight. The producer and vineyard sources behind the BTW label are not clearly documented and should be confirmed before publication.

Vinification

A dry sparkling made from Pinot Noir and Chardonnay. The two varieties are picked early to lock in fresh acidity, pressed gently to yield pale, low-phenolic juice, and fermented cool to build a clean base wine. Non-vintage blending across the two grapes and, potentially, reserve stocks gives consistency from release to release. A secondary fermentation creates the sparkle, with time on lees adding subtle bready complexity, and the wine is finished at a brut level of dosage. Whether the second ferment is conducted in bottle or by tank is not documented and should be verified, along with the producer behind the label.
