Tasting Notes

Deep burgundy with a ruby hue. Lifted primary fruits of blood plum, blackberry, maraschino cherry, hints of liquorice and the added complexity of mixed spice and Christmas cake.
 

Palate:
The palate is smooth, rich and complex with mulberry fruit and earthy savoury length, the addition of a little Vintage Port at dosage adds hints of liquorice and mocha. Subtle well integrated oak provides fine tannins and a long, dry, savoury finish.

The base blend for this wine was aged in a combination of one and three year old French oak for twenty four months. We employed the ‘Methode Traditionelle’ process for secondary fermentation, followed by a further 9 months on yeast lees prior to disgorging. For the liqueur d’expédition we have added a very small amount of our Vintage Port to impart richness and complexity to the wine. Please take care opening the cork and wire muselet, pointing away from body.
 

The extra time spent aging in tirage ensures this wine is ready to drink upon release. This wine is destined to be enjoyed chilled with your traditional Chistmas turkey or pork roast. Adventurous diners might also try this wine with Peking duck pancakes and salted cucumber.

Vineyard Cultivation

Campbells is a family winery at Rutherglen in north-east Victoria, founded in 1870 and run today by the fifth generation. Rutherglen's warm continental climate and red-brown loam and sandy soils produce Shiraz of ripe, deep-fruited generosity, well suited to the traditional Australian sparkling red. Made as a non-vintage wine, the Sparkling Shiraz is assembled to a consistent house style rather than expressing one season, drawing on Shiraz chosen for dark colour and rich plum and blackberry flavour. The family manages its long-established vineyards for full ripeness while keeping the fruit balanced, giving the concentration a sparkling red needs to carry both tannin and a touch of sweetness.

Vinification

A traditional Australian sparkling red made from Rutherglen Shiraz. The fruit is fermented on skins as a full-bodied dry red base to develop colour, tannin and dark-fruit depth, often with oak maturation and the blending of reserve parcels to add spice and complexity across the non-vintage cuvee. A secondary fermentation then generates the sparkle, and the wine is finished with a dosage that leaves it off-dry, balancing the savoury red-wine structure with a lively mousse. The style rewards the region's ripe, warm-climate fruit. The precise method, oak regime and dosage should be confirmed with the winery.
