Cannonball was founded in 2006 by Yoav Gilat and partners as part of what became the Share A Splash Wine Co., with a base in Sonoma County. The Cabernet is a multi-region California blend, drawing on Sonoma and other select Californian vineyards to achieve a consistent, approachable house style rather than a single-vineyard expression. Sites are chosen across warmer inland and moderating coastal-influenced areas to balance ripeness and freshness. The 2021 California vintage followed drought conditions that reduced yields and concentrated fruit, producing deeply coloured Cabernet with ripe tannin. Blending across appellations is central to the approach, prioritising reliability and value over site specificity.

The fruit was destemmed and fermented in stainless steel with temperature control and regular cap management to extract colour and structure, then matured in oak, including a proportion of French oak, to frame the wine with soft, spice-and-mocha-inflected tannin. Lots from different regions were vinified separately and blended to build the final wine, aiming for a rounded, fruit-forward profile of blackberry, pomegranate and currant with firm but polished tannin.
