Coming from the Santa Cruz Mountains, the 2022 Cabernet Sauvignon Peter Martin Ray is a deeper red color and is layered and complete, with fantastic intensity to its notes of cassis, kirsch, fresh flowers, and forest herbs. It has a long-lasting, ripe feel, and the finish is velvety but well-defined. It’s a wine you can use to inch people over to the wines of Ceritas. The berries are tiny in this vineyard, contributing to the profound intensity this wine brings forward.

Vineyard Cultivation

Ceritas was founded by John Raytek and Phoebe Bass, and is admired for precision, purity and a Burgundian sensibility applied to California, working across around a dozen sites in Sonoma and the Santa Cruz Mountains, plus this Napa bottling. The Paratus wine comes from a vineyard on Mount Veeder, a cool, high-elevation Napa appellation of volcanic and sedimentary soils where Cabernet Sauvignon ripens slowly on steep, low-vigour slopes, producing small berries with firm structure and freshness. Farming emphasises restraint and site transparency rather than overt power. The 2022 Napa season included a notable late-summer heat spike, and careful picking decisions were needed to preserve the aromatic lift and acidity that define the Ceritas style.

Vinification

Consistent with Ceritas's low-intervention approach, the Cabernet was fermented with native yeasts, with gentle handling to protect aromatics and avoid over-extraction. Maceration was measured, aiming for fine, ripe tannin rather than weight, and the wine was matured in French oak with restrained use of new wood, favouring older or seasoned barrels to preserve fruit purity and cassis-and-floral character. The wine was aged in barrel before bottling with minimal filtration. Exact figures for whole-bunch use, new-oak percentage and élevage length for the 2022 Paratus are not published and would benefit from confirmation directly from the producer.
