Tasting Notes

Fidèle is 100% Pinot Noir grown on Kimmeridgian limestone soils. This includes roughly 5% reserve wine from a perpetual blend started in 2001 and stored in two large old foudres. The Fonnet vineyard, located in a small, enclosed valley, forms the heart of this cuvée. Sorbée provides much of the balance, topped off by Châtel—a rocky, limestone-rich vineyard with 20-plus-year-old Pinot Noir vines. Overall, the vines average 30 years of age. After pressing in a traditional vertical Coquard press, Fidèle is vinified—without added yeast or chaptalisation—in used Burgundy barrels for 10 months (these came from Domaine Arnaud Ente in Meursault). The wine then spends 15 to 20 months on lees in bottle after secondary fermentation and is disgorged with zero dosage. Gautherot describes this as “a dangerous wine”—the bottle disappears so quickly—and this description could not be more apt. Dry, savoury and super mineral!

"Vibrant yellow color. Intensely floral and mineral on the nose, displaying scents of Anjou pear, quinine, tangerine and iodine, with a spicy overtone. Rich but taut, offering bright orchard and citrus fruit flavors that take on weight and a subtle honeyed nuance with air. The mineral and floral notes come back strong on the finish, which is impressively pure, focused and long."

"Disgorged in October 2017 the oak-fermented wine shows a golden-reddish apricot color and opens with a very delicate, floral and herbal yet intense and vinous bouquet of red fruits, with warm, dry earth and spices and just a hint of oak. Bone dry (of course), fresh and elegant on the palate, this is an impressively delicate and filigreed Champagne to be enjoyed as a still wine rather than a fizz. The finish is long, clear, dry and well-structured (even with fine tannins) and reveals discreet salinity. In fact, Fidèle drinks like a Burgundy-inspired Coteaux Champenois with very fine but not effervescent bubbles, persistent lemon juice and a touch of oaky flavors. Don't use a flute to enjoy this young, gastronomic wine; instead, use a wine glass or one of the rounder, more voluminous Champagne glasses like the Lehmann Jamesse (which stresses the finesse rather than the vinous character). Don't serve the Fidèle too fresh, either, but if you must, wait a bit and don't worry if the wine is suddenly 12 or even 14 degrees Celsius—it's still delicious and even more vinous then! (To be honest, when tasted at 15 or 16 degrees Celsius, I even got some Gewürztraminer notes (lychees) on the nose...!)"

"Touch of cream and white flowers, biscuits, brine/rockpool, almond and ripe citrus. Silky bubble, saline feel, gentle oxidative tang, real verve through the palate and a long dry spice and nut finish. Yum. Excellent. Fresh, and also complex. Chalky too. Most Champagne is kind of gross, but I really enjoyed drinking this."

"This is somewhat controversial as the level of aldehyde is high and unlike a Selosse and an Egly served alongside, it lacked the depth, richness and complexity to seem balanced. Lots of green apple and Aspro notes. An interesting wine that polarised tasters. There's no doubt the fruit quality is high. "
