If variety is the spice of life, then Chandon Brut is a perfectly seasoned little sparkling. A mix of Chardonnay, Pinot Noir and Meunier grapes are all carefully selected from cool climate spots across Victoria.

A mix of Chardonnay, Pinot Noir and Meunier grapes are all carefully selected from cool climate spots across Victoria, including Whitlands Plateau, Strathbogie Ranges and the Upper Yarra Valley. Out here in wine country, it’s the changes in altitude, age and aspect that can create something deliciously unexpected. The result is a fresh, vibrant finish with hints of apple sorbet, lemon zest, sourdough and nougat. It’s diversity that makes the difference – and luckily for us, we’ve got it in spades.

Fresh seafood is a nice place to start, think oysters, fresh scallops and grilled calamari. Delicious soft white cheeses also pair well with Chandon Brut.

Vineyard Cultivation

Chandon Australia has produced sparkling wine from its Coldstream winery in the Yarra Valley since 1986, when Moet & Chandon selected Victoria for its Australian house. The Brut NV draws fruit from multiple Victorian regions rather than a single vineyard, blending cool Yarra Valley sites with higher-altitude parcels in the Strathbogie Ranges and other elevated locations acquired to secure acidity and length. Soils range from valley-floor clay-loams to granitic upland ground, and the diversity of altitude and aspect is central to the house blend. As a non-vintage wine, the Brut is designed for year-to-year consistency, with Chardonnay and Pinot Noir forming the backbone and Meunier adding roundness.

Vinification

Base wines are picked early to preserve acidity and gently pressed, with fermentation in stainless steel to keep the fruit fresh and precise. The Brut is made by methode traditionnelle, taking its second fermentation in bottle followed by maturation on lees to build biscuity complexity and a creamy texture. A proportion of reserve wine from previous years is blended to hold the non-vintage style consistent. Following lees ageing the wine is riddled, disgorged and finished with a brut-level dosage to set a dry, balanced palate. The finished sparkling shows citrus and stone-fruit notes with a fine, active mousse.
