Pierre Chavin is a Languedoc-based producer at Beziers in southern France, established in 2010 and known for its range of alcohol-free wines under the Chavin and Pierre Zero labels. The ZERO Blanc de Blancs draws on Chardonnay grown in Languedoc-Roussillon, where a warm Mediterranean climate and limestone and clay soils ripen the variety fully. As a Non-Vintage alcohol-free wine the emphasis is on sourcing clean, aromatic Chardonnay across seasons to give a consistent base; the fruit is farmed and harvested as for a conventional still wine before the alcohol is later removed, so vineyard work follows standard practice for the region.

The base Chardonnay is vinified as a dry white, after which the alcohol is gently removed to reach 0.0% abv in a process designed to preserve aroma and acidity. The still de-alcoholised wine is then lightly sweetened and carbonated to give a fine, persistent sparkle in a Blanc de Blancs style. Because it is a zero-alcohol product it does not undergo a traditional or tank second fermentation to create its bubble; the result is low in calories and suited to those avoiding alcohol, with citrus and orchard-fruit character.
