Tasting Notes

The Goelet family established Clover Hill in 1986 on a former dairy farm in northeast Tasmania, aiming to craft sparkling wines of international stature; their dedication has earned induction into the Australian Sparkling Hall of Honour.

The Cuvée Exceptionnelle is a multi‑vintage blend of around 59% Chardonnay, 35% Pinot Noir and 6% Pinot Meunier drawn from the Tamar Valley. Base wines ferment in stainless steel and a portion in oak; the cuvée then ages two to three years on its lees and is finished with a dosage of 12 g/L or less.

Aromas of lemon, ripe apple and white blossom lead into a palate showing brioche, honey and toasted hazelnut. Crisp acidity and fine, persistent bubbles extend the finish, making this a benchmark of Tasmanian sparkling.

Critic Scores

Bright straw yellow and a subtle bead in the core. Poached apple and just baked sourdough aromatics. Fruit tightens into green apple on the palate, still some nice savoury bakery complexity. Both driving acid and a mousse of vigour ensure it has intensity and length, to a crisp and dry finish that lingers long.

Bright, pure aromas of sliced lemons, oyster shells, white flowers, Asian pears and crushed stones. The palate is fresh with a vivid line of acidity. Nice tension is balanced by generosity and minerality. Base vintage 2023. A blend of 60% chardonnay, 35% pinot noir and 5% pinot meunier. Drink or hold.

A vibrant Tasmanian sparkling; 59/35/6% chardonnay/pinot noir/pinot meunier. Shows light straw with green flashes in the glass and a fine, energetic bead. Citrus and stone fruits on the nose with some crunchy green apple, dabs of cream, proving bread, white flowers, sea spray and stone. Crisp, balanced and refreshing with a briney, mineral line; all detail and velocity and outstanding, sapid drinking at this price.

Vineyard Cultivation

Clover Hill was established in 1986 at Lebrina in the Pipers River district of northern Tasmania, on cool-climate ground chosen to echo the conditions of Champagne. The estate has now farmed its vineyards for over 40 years, with fruit grown on the region's red basalt and clay soils under a maritime climate that delivers slow ripening, low temperatures and high natural acidity. The Cuvee Exceptionnelle is Clover Hill's top multi-vintage tier, built on Chardonnay-led fruit with Pinot Noir and a small portion of Meunier. Rather than a single season, it is composed from selected parcels and reserve material assembled to the estate's multi-vintage philosophy for consistency and complexity.

Vinification

Fruit is picked at the cool end of ripeness to preserve acidity and gently pressed for the base wines. Exceptionnelle is made by methode traditionnelle, with the second fermentation completed in bottle and long lees ageing to develop toast, patisserie and a creamy autolytic texture appropriate to a prestige tier. Clover Hill's multi-vintage approach blends reserve wines held under several preservation techniques, layering aged material into the cuvee for depth while maintaining a consistent house style. After extended maturation the wine is riddled, disgorged and finished with a restrained dosage, giving a fine-beaded, savoury and long sparkling. A recent release was rated 93 points by Halliday.
