Tasting Notes

Hand picked and destemmed only. Each parcel was fermented in open vessels and hand plunged throughout a moderate temperature fermentation. One parcel was left on skins after completion of fermentation for 12 weeks in order to lengthen tannins and add complexity. All parcels were settled for around 4 weeks in tank prior to barrelling down. The wine then spent 22 months in French Oak prior to blending and bottling in September 2021. Diam closure.

Blackberry, mulberry, dark chocolate and edges of black cherry. The focussed palate shows liquorice notes, gorgeous oak and black fruits, with fine tannins pulling a line from start to finish. There is a graphite component through the middle, together with a red gravel complexity, which conspire to add depth and density. Balance is key, with the natural acidity aiding the persistence and complimenting the depth we aspire to in our best wines.

Vinification & Cultivation

Vineyard Cultivation

Crawford River is a small, family-owned winery located in Henty, a cool-climate subregion of western Victoria in Australia's southernmost wine region. The 2019 Cabernet Sauvignon is sourced from the estate's mature vineyard, planted to Cabernet Sauvignon on well-drained volcanic soils in a region where maritime influences moderate the growing season. Henty's cool conditions and longer ripening period allow Cabernet Sauvignon to develop structural complexity and refined tannin architecture rather than over-ripe fruit character. John Thomson established Crawford River in the 1980s and has maintained a fastidious focus on site selection and vintage-specific viticulture. The 2019 season brought moderate warmth and good ripeness without excessive sugar accumulation, ideal for cool-climate Cabernet expression.

Vinification

Hand-harvested fruit is destemmed and fermented in temperature-controlled open vessels using a combination of wild and cultured yeasts over 7–10 days, depending on vintage requirements. Post-fermentation maceration extends tannin extraction and colour development. The wine is then aged in French oak (a combination of new and used barrels) for 18 months, allowing gradual wood integration and tertiary flavour development. The approach balances oak influence with pure fruit expression, avoiding excessive new-wood character. Following barrel aging and completion of malolactic fermentation, the wine rests in bottle before release.

About this Wine

Crawford River

Crawford River wines has been family owned and operated since 1975, crafting wines exclusively from selected, hand-picked fruit grown in their estate vineyard. And it’s not just the fruit that comes directly from their estate, every wine is also vinified and bottled on site too. The fruit is brought to the winery in small parcels, where meticulous attention is paid to every tiniest detail. Patience and time are of the essence in this winery. The team at Crawford River believes in minimal interference and movement during vinification, preferring the fruit to naturally express their special terroir. It is their belief that this approach influences the pure and elegant qualities found in their wines.
Since 2005 there has been a happy confluence of young and old at Crawford River wines. While professionally trained and with numerous international vintages under her belt, Belinda knows there is no substitute for John´s 35+ years of experience in the Estate vineyard he created.

The Crawford River vineyard lies at the alluvial edge of a volcanic lava flow. The 11.5 Ha vineyard has its roots in an unusually complex, mineral-rich soil base. Gravelly, friable, basalt loam overlays permeable clay which in turn lies above a limestone base created by an ancient, risen seabed.
Riesling and Cabernet Sauvignon are the two main varieties in the vineyard, with smaller plantings of Cabernet Franc, Merlot, Semillon and Sauvignon Blanc. And with care comes quality; all major activities such as picking, pruning, leaf-plucking, shoot-thinning and green pruning are done lovingly by hand. Well done Crawford River crew!
