Vineyard Cultivation

Dalrymple is a Tasmanian estate now within the Hill-Smith Family Estates stable (the Yalumba family), drawing its Pinot Noir from the cool, maritime Pipers River district in the island's north-east. The vineyards sit on red-brown ferrosol soils derived from ancient basalt over clay, which give good water retention and drive fine, savoury structure. Farming follows a low-intervention, site-focused approach with careful canopy management to protect fruit in a marginal climate. The 2024 growing season across northern Tasmania was cool and comparatively even, allowing a long, slow ripening period that preserved natural acidity and produced small, concentrated bunches with bright red-fruit character rather than jammy ripeness.

Vinification

Fruit was hand-picked in the cool of the season and sorted, with a portion of whole bunches retained to add perfume and tannin structure. After a short cold soak, parcels were fermented with a mix of cultured and indigenous yeasts in open vessels, hand-plunged to manage a gentle extraction. The wine completed malolactic fermentation in barrel and was matured in French oak, a modest proportion new, for roughly ten to twelve months to build texture without masking fruit. Minimal fining and filtration preserved the wine's clarity of flavour, giving bright cherry, raspberry and strawberry fruit framed by fresh acidity and fine, elegant tannins.
