Tasting Notes

Tod and Debbie Dexter planted their vineyard in Merricks, Mornington Peninsula in 1987. After a jaunt to Burgundy in 2000, Tod decided he wanted something more. After helping establish the formidable reputation of Stonier wines with Brian Stonier, and a time with Mornington icon Yabby Lake, at the age of 50, his own project, Dexter wines, came to be. 

Heritage vines meet modern finesse. Planted in 1992 with some of the first Bernard clones (96 & 277) in Victoria, this small Chardonnay block consistently produces fruit of stunning depth and balance. In exceptional seasons, Tod isolates a tiny parcel for separate vinification, highlighting its distinctive texture and minerality. Production is extremely limited and not guaranteed every year — a true collector’s release showcasing the evolution of Chardonnay on the Mornington Peninsula.

Critic Scores

Almost delicate at first, a faint fragrance of lemon blossom, ginger flower and poached stone fruit, some flint, which is appealing. The palate also reticent, with lemon, white peach and spicy oak, yet a savouriness coming through. It’s supple, juicy and refreshing, but with a bit more time in bottle, this will have its day.

Light bright lemon yellow. Yellow peach, bacon fat and roasting nut aromas. Good intensity from entry, peach and bath salts at the core with crunchy acidity driving through. Savoury notes of nougat and roast nuts build. Great length, taut and balanced to the finish

This is a complex style, oystery, suggestive of flint, smoky, almost bacon-y, with nectarine pip, peach, citrus and brine notes, sprays of herbs in the mix too. It’s a hard wine to get a handle on; it has that ultra young, just-ripe feel; the flavours land a half-step away from the beat. I like this style of wine and I think that it will mature very well, but at least for now it tales a bit of faith.

Vineyard Cultivation

Tod and Debbie Dexter planted their vineyard at Merricks, in the southern Mornington Peninsula, in 1987. After years supplying fruit to Stonier, where Tod helped build the label's reputation, and a spell at Yabby Lake, he launched Dexter Wines under his own name in the mid-2000s. The vineyard sits on gently sloping ground with free-draining sandy loam over clay, farmed with an emphasis on low yields and hand tending. The Black Label is a selection made only in the strongest seasons. The 2024 growing season on the Peninsula was cool and even, allowing chardonnay to ripen slowly and retain the taut natural acidity the site is known for.

Vinification

Fruit for the Black Label is hand-picked and whole-bunch pressed to preserve delicacy and limit phenolic pick-up. The juice is settled briefly then wild-fermented in French oak barriques, with a higher proportion of newer wood reserved for this cuvee. Malolactic fermentation is allowed to run, softening the acid line, and the wine is matured on its full lees with periodic stirring to build the flinty, nutty, savoury texture. Sulphides are handled deliberately to give the smoky, struck-match complexity seen in the wine. Bottled at around 13.5% alcohol after roughly ten to eleven months in barrel, unfined where possible.
