Tasting Notes

This new project from the granite soils in the northern end of the Macedon Ranges at 460m above sea level is an exciting addition to our activities. The vineyard was established in 1995 and the fruit has ostensibly been “lost” interstate until new Victorian owners took over in spring 2021. The new regime has quickly invested in the infrastructure and fine-tuned activities and several top producers are sourcing fruit from this excellent site. The Riesling was harvested in early April and wild yeast fermented in old French oak then matured for six months on fine yeast lees. In the winemaking mind it was important to preserve/respect the vibrancy of the fruit but to also seek further subtle depth of complexity and palate texture and flow. Not too fruity, not too savoury, hopefully a wine to please Goldilocks. It feels like we have landed pretty close to where we would like the style to be. The nose is quite complex with grapefruit, guava, spice, lime juice and wet stone aromas evident. The palate is balanced, fresh, harmoniously textured and ends very clean, chalky and long. It’s very delicious.

Vineyard Cultivation

DHILLON by Bindi is a newer range from Michael Dhillon of Bindi, the highly regarded Macedon Ranges estate. The Glenhope vineyard lies at the northern end of the Macedon Ranges at around 460 metres elevation, on granite-derived soils. Planted in 1995, the site's fruit had for years gone interstate until new Victorian owners took over in spring 2021 and invested in the vineyard, drawing interest from several leading producers. The elevated, granitic setting gives riesling slow ripening, firm natural acidity and a chalky mineral character. The 2024 season allowed the fruit to be picked in early April with vibrancy preserved, aiming for a wine that balances fruit freshness against subtle savoury depth.

Vinification

The riesling was harvested in early April and fermented with wild yeast in old French oak rather than stainless steel, an unusual choice for the variety intended to add texture without overt oak flavour. It was then matured for around six months on fine yeast lees. The winemaking goal was to respect the vibrancy of the fruit while seeking further subtle complexity, palate texture and flow - neither overtly fruity nor heavily savoury. The result is described as balanced and fresh, with grapefruit, guava, spice, lime and wet-stone aromas, finishing clean, chalky and long. Bottled at about 12.5% alcohol.
