A blend of 80% Marsanne and 20% Roussanne from the l’Ermite, Péleat, and les Rocoules lieux-dits, it exhibits a huge, opulent bouquet of buttered citrus, flower oil, orange marmalade, quince, and honeysuckle that’s to die for.

Critic Scores

Complex layers of heady apple and quince unfurl alongside toasted hazelnut, acacia and smoked green herb notes in this gorgeous, concentrated white. Saline, bitter mineral elements cut through for a chiseled finish, which stretches way out. New flavor details — verbena, straw, crushed flint, baking spices — emerge with each revisit to the glass. Marsanne and Roussanne.

Vineyard Cultivation

Chave's white-grape holdings span five hectares of Marsanne and Roussanne, vines exceeding 60 years old, rooted in Hermitage's complex granite, limestone, and schist soils. These parcels occupy choice hillside positions, capturing consistent air flow that allows preservation of natural acidity critical to white-wine structure. The 2021 growing season presented moderate warmth and adequate moisture—conditions favouring aromatic development whilst maintaining the freshness and texture essential to Hermitage blanc. The old-vine expression brings mineral intensity and layered complexity; careful hand selection at harvest ensures only perfectly mature clusters enter the cellar.

Vinification

White-fruit processing at Chave emphasises gentle handling and temperature control. Grapes are pressed with minimal force, allowing delicate juice extraction before fermentation in stainless steel or neutral wood—conditions favouring primary-fruit expression and natural acidity retention. Fermentation occurs at cool temperatures, preserving aromatic character. The wine typically sees gentle oak contact for subtle textural development, though new oak remains minimal to preserve the varietal and terroir signatures. The resulting wine ages briefly before release, maintaining freshness whilst building complexity through time in bottle.
