A biodynamic Chablis that marries ripe fruit with electric tension
The 2023 Chablis from Domaine Moreau Naudet is a precise, transparent reflection of thoughtful viticulture and restrained winemaking. Sourced from 20 to 30 year old organically farmed vines in Préhy, Courgis, and Chichée, this wine anchors the domaine’s lineup, capturing the essence of Chablis when yields are low, grapes are hand harvested, and intervention is kept to a minimum.
Eschewing the still common lean, under ripe style, Moreau Naudet allows longer hang time, achieving full ripeness without losing the region’s hallmark tension. Fermented with native yeasts, aged on lees, and bottled without chaptalisation, the wine is textured and vibrant - stone fruit and citrus layered with a flicker of flint, lifted by bright acidity and a saline snap. The 2023 vintage offers a bit more generosity and openness, making it compelling today, though its backbone suggests strong aging potential.
This is Chablis made the old way, but with a modern eye, and it’s all the more compelling for it.
