Tasting Notes

The 2025 season was temperate, with a fairly cool and dry growing season. Warm, dry weather in late January and into early February allowed the grapes to fully ripen in excellent condition. Yields were high and the quality was exceptional.

The 2025 Domenica Estate Chardonnay was handpicked, over the course of 10 days, by block and clone in mid February. The fruit was crushed, pressed and chilled in stainless steel overnight.

 

The juice fermented in a mixture of 600 litre demi-muids and 228 litre barriques. As usual, the new oak component is around 20%.

This year has produced a wine of purity and true representation of site. Stone fruit, white flowers and ginger aromatics lead to a mineral driven entry. The light toast, larger format oak brings depth and texture in the mid-palate, allowing the fruit to expand and carry through the full length of the wine.

Critic Scores

This is nearly all estate fruit, with some Warner Vineyard to augment. It’s P58, Mendoza and 95 clone, raised in Austrian oak of which 20% is new.

Pink grapefruit, white peach, hazelnut and spice, light floral notes. It’s bright and fresh, citrus in the driving seat with a little stone fruit in the back, a juicy tang, fine chalk dust texture, a twist of lemon peel cinches a cool finish of excellent length. Beautiful wine here. So lovely to drink.

Vineyard Cultivation

Domenica is the Beechworth label of vigneron Peter Graham, focused on estate-grown wines from the granite country of north-east Victoria. The Chardonnay is drawn almost entirely from Domenica's own vineyard, supplemented by fruit from the nearby Warner Vineyard, planted to a mix of clones including P58, Mendoza and the I10V1 (95) selection. The lean, granitic soils and elevated, cool-nights climate of Beechworth give slow ripening, fine natural acidity and mineral drive. Farming is hands-on and estate-focused. The 2025 fruit was picked across a seven-day window in early March in immaculate condition - fully ripe with ideal acidity - the crop lighter than usual, which, with an extended ripening, gave greater concentration and precision to the vintage.

Vinification

Fruit is hand-picked, lightly crushed and gently pressed, with the heaviest solids briefly settled out by gravity before the juice is run to barrel. Fermentation begins naturally with wild yeast and proceeds at its own pace in a mix of 600-litre demi-muids and 228-litre barriques of Austrian oak, of which roughly 20 to 25 per cent is new. The wine is matured on lees to build texture and mid-palate weight while retaining the citrus-driven freshness that marks the style, with the reviewer noting pink grapefruit, white peach, hazelnut and a fine chalk-dust texture. The larger-format demi-muids temper oak influence, keeping the finish cool, taut and long.
