Hand-harvested grapes undergo gentle crushing and pneumatic pressing to extract clarity and freshness without astringency or excessive phenolic extraction. Fermentation takes place in stainless-steel vessels using natural yeasts occurring on the fruit, a slow and deliberate process that may extend into the following spring or even summer. Fine lees contact during winter months adds textural subtlety and aromatic complexity to the developing wine. The wine remains in tank until spring racking and minimal clarification, preserving natural character. Bottling is conducted without fining or filtration, preserving the vineyard's distinctive mineral signature and aromatic intensity.
