Vinification & Cultivation

Vineyard Cultivation

The 2016 Alices Shiraz originates from Greenock Creek's mature vineyard in the Seppeltsfield subregion, where Shiraz has been cultivated for decades on deep, free-draining loams. The 2016 vintage brought warm, dry conditions punctuated by moderate rainfall, creating ideal ripening patterns for Shiraz. Flowering proceeded evenly and fruit set was generous, yet the mature vines' natural low-vigour growing habit naturally limited yields to concentration-promoting levels. The consistent warmth through the growing season ensured full phenolic maturity and deep colour development by harvest.

Vinification

Harvested fruit underwent crushing and fermentation in large open wooden vessels using wild yeast. The primary fermentation lasted 10-12 days with twice-daily plunging to extract colour, flavour, and tannin structure. Following fermentation, the wine underwent full malolactic fermentation and spent 16-18 months in French oak barrels, with a split between new and older wood to avoid over-oaking whilst building complexity. Minimal processing and natural clarification preserved the wine's purity and fine tannin profile.

About this Wine

Greenock Creek

Located in Seppeltsfield in South Australia's Barossa Valley, Grennock Creek is a boutique winery owned by Michael & Annabelle Waugh. In 1975, while working in the area as a stonemason, Michael found an uninhabited cottage next to Grennock Creek and purchased the site that same year with the intention to build a winery. After planting vineyard plantings and construction on the winemaking facility, the cellar door opened in 1988 with just two wines available.

Grennock Creek now features seven wines. Focusing on small lot, estate-grown fruit, theses single vineyard Cabernet, Shiraz and Grenache are dry-grown with some vines at over 80 years of age. The grapes are generally fermented in large, shallow open fermenters, pumped over and pressed through a basket press. Both American and French oak is used with a mixture of new and old barrels. Depending on the vineyard and variety, the wines are aged for 12-27 months on average and are bottled without fining or filtration.

South Australia

If you like Australian wine, then you probably like South Australia wine. The rich reds produced there put Australia on the wine-making map of the world. With over 40% of the countries vineyards, South Australia can rightfully call itself the wine state.

Wines are produced in several regions throughout the state, though many are naturally grouped together, like Barossa and Eden Valleys, only 15 minutes apart. They include such regions as Barossa Valley, Clare Valley, Eden Valley, Coonawarra, Adelaide Hills, Kangaroo Island, Langhorne Creek, The Limestone Coast, McLaren Vale and Wrattonbully to name but a few!

Barossa Valley boasts some of the oldest vines in Australia dating back to 1843 and produces some of the world's finest Shiraz, whilst the 'terra rossa' soils of Coonawarra is most suited to producing outstanding Cabernet Sauvignons. If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
