Tasting Notes

Hattingley Valley was founded by Simon and Nicola Robinson, who planted their first vines in Hampshire in 2008. The estate now farms 24 hectares across two sites and operates its own winery, blending modern technology with traditional techniques and partial barrel fermentation.

The Classic Reserve NV is based on the 2014 vintage with 18% reserve wines; it combines 50% Chardonnay, 30% Pinot Noir, 19% Pinot Meunier and 1% Pinot Gris.

Base wines are fermented partly in stainless steel and partly in old oak barriques. After assemblage the wine undergoes secondary fermentation in bottle and spends 24 months on lees before disgorgement with a 7 g/L dosage. Aromas of lemon, green apple and English hedgerow blossom lead into a palate that is brisk, citrus‑driven and lifted by creamy texture; subtle brioche notes from lees ageing add depth.

Critic Scores

Smooth hints of apricot and vanilla immediately give the nose an impression of richness and generosity. The palate also has a creaminess and sonorous layers of gentle apple and stone fruit, mingling with notions of sponge cake. But this stays on the svelte side, brightened by a lightning flash of brisk crispness. It combines freshness and mellowness, showing what reserve wines can do to a delicious blend. The finish is dry, pure and delicious.

Vineyard Cultivation

Hattingley Valley is a leading English sparkling-wine producer in Hampshire, founded by Simon Robinson with its first vines planted around 2008-2009. The estate sits on the chalk and clay-flint soils of the Hampshire Downs, part of the broad chalk seam that underpins much of England's finest traditional-method sparkling, lending the wines a bright, saline line of acidity. The Classic Reserve is a non-vintage cuvee built around a Chardonnay, Pinot Noir and Pinot Meunier blend, drawing on estate and contract fruit from Hampshire. For the release documented here the base wine came from the 2017 harvest, blended with a substantial proportion of older reserve wine to smooth vintage variation.

Vinification

Made by the traditional method, the cuvee is roughly 45% Chardonnay, 35% Pinot Noir and 20% Pinot Meunier. The base wine is blended with about 37% reserve wine, and around 15% of the blend is barrel-fermented in three- and four-year-old white Burgundy barrels with partial malolactic conversion, adding texture without overt oak. After the base spends about eight months on its fermentation lees, the wine undergoes second fermentation in bottle and matures around four years on lees before disgorgement. Dosage is low, about 3 g/L, giving a taut, dry style with citrus, apple and gentle toasty complexity.
