Tasting Notes

As always the Holyman Pinot comes from a block of old vines called Jack. Its 75% hand selected whole bunch due to the season, and we use 30% new French oak Barriques.
The fruit is hand picked and our well trained pickers do all our fruit sorting in the vineyard. After 7 days of cold soak the wine is naturally fermented and no additions are made except for Sulphur as a preservative. Light in colour, but full of flavour. Typical forest floor and hints cranberry and red cherry. The palate has all the hallmark red-fruits, hints of mushroom and a complexing smoky oak edge. The beautiful, chalky tannin from the whole bunch component perfectly complement the fresh fruits. It was bottled without being fined or filtered.
 

Critic Scores

Cherry, dark raspberry, mint and earth, a spicy cinnamon and floral perfume too. It’s medium-bodied, well-etched with fine but firm tannin, quite ‘minerally’ too, an Earl Grey tea and floral mouth-perfume, crisp yet strict on a finish of excellent length. Oak shows a bit at present, though it won’t later. Very good.

Vineyard Cultivation

Holyman is the premium label of Joe and Lou Holyman's Stoney Rise, based at Rowella on the western bank of the Tamar River in northern Tasmania. The Holyman family have farmed here for generations, and the fruit for this wine comes from a block of older, low-yielding vines the family calls Jack, planted on the free-draining mudstone and clay slopes above the river. The site is worked with minimal intervention and hand tending. The 2024 growing season in the Tamar Valley was cool and drawn out, allowing slow, even ripening that preserved natural acidity and the perfumed, mineral character the site is known for, with picking kept to modest crop levels.

Vinification

Fruit was hand picked, with sorting carried out in the vineyard by the picking team. Reflecting the season, roughly 75 per cent of the batch was retained as whole bunches. After around seven days of cold soak the must was fermented with wild yeast, with no additions other than sulphur as a preservative. The wine was matured in French oak barriques, about 30 per cent of them new, then bottled without fining or filtration. The whole-bunch component contributes fine, chalky tannin and lift, framing the pale-hued but flavoursome, savoury red-fruited style.
