Delicate notes of whipped almond cream, lily flowers, vineyard peach, minty herbs, smoke, candied grapefruit, and quite some fine spices, the wine is creamy yet intense and dynamic on the palate, proves to be very focused and a long finish.

Tasting Notes

This is Katharina Prüm’s desert island category. Light in body but intense in flavour, the wines deliver a mesmerising balance between elegance, freshness, racy fruit and slate-like minerality, unique to the Mosel. As always, there is considerably more depth of fruit here than in the Kabinett-level wines, although not necessarily more overt sweetness. Instead, it is a question of more flesh, more power and, therefore, wines that can stand up to richer food. Prüm believes this category is the most versatile at the table.

Smoke, lime zest, the ripest Mirabelle, and a highlight of chervil play on the nose of the 2021 Riesling Wehlener Sonnenuhr Spätlese. More air brings wonderfully ripe notions of lemon zest, not quite candied but delightfully ripe. The palate is rounded, concentrated, profound and full of golden yet citrus-edged fruit. Slightly richer than the other Spätlesen but beautifully long with alluring ripe lemon and lime freshness. Weightless substance. Wonderful

Here’s a very classic Mosel Spatlese with exactly the combination of richness, elegance and delicacy that makes this category unique. Such delicate white peach and sliced pear, rose and honeysuckle aromas. Very long finish that is as succulent as it is refined. You just want to linger there for as long as you can. Drink or hold.

The 2022 Riesling Wehlener Sonnenuhr Spätlese #22 was selected in "two to three parcels of old vines," Katharina Prüm explained. The nose still has a touch of yeast, and underneath, it shimmers almost with the crunch of a green but red-cheeked apple. The palate is utterly fine. This seems weightless and light, with the most serene balance of sweetness and freshness, coming across as effortless, unforced, with a subtle savoriness in the distance, waiting to make itself more felt in the future. For now, there is a gentle yet precise notion of white peach, tenderly sweet and utterly balanced. Supreme.

Tasted young, this sprightly spätlese announces itself with strikes of flint and an intensely smoky, earthen veil of reduction. With a bit of time and aeration (even 15 minutes introduces a remarkable transformation) you'll find deep, dazzling layers of crisp white peach, lime and lemongrass speckled with salt and stone. It's a leaner expression of the Wehlener Sonnenuhr, with a delicacy of texture that juxtaposes a piercing, pure fruit profile. A thirst-quenching sip with just a hint of sweetness that lingers on the finish. Hold until 2026 if possible, it will develop stunningly for decades.

Vineyard Cultivation

The 2022 growing season gifted Wehlener Sonnenuhr with ideal conditions for Spätlese-level ripeness. Early May warmth accelerated bud break and development, with sustained summer heat concentrating fruit flavours across the slate slopes. The vineyard's 70%-gradient terrain maximised solar exposure even as vines matured ahead of schedule. The Prüm family's decision to harvest selectively in mid-September—later than lighter-level fruit but before the month's abundant rainfall—captured the sweet spot between concentration and freshness. Approximately 90% of the estate's vines remain ungrafted in the slate; these elderly vines produce smaller berries with lower yields but heightened concentration, ideal for Spätlese expression. The 2022 vintage's dry summer had firmed berry skins, minimising disease whilst the September rains plumped the fruit with essential hydration.

Vinification

Spätlese fruit, harvested in mid-September 2022 at moderately elevated ripeness, underwent pressing to gentle pressure-only standards, preserving juice clarity. The estate's foundational technique—spontaneous fermentation without added yeast—allowed indigenous microflora to guide fermentation in stainless steel vessels. The vintage's early ripeness meant fermentation proceeded relatively briskly, yet the Prüm family resists temperature control, preferring natural fermentation rhythms. Extended maturation on fine lees through autumn and winter developed the wine's characteristic minerality and complexity. Spätlese designates berries gathered at higher ripeness than Kabinett but lower than Auslese, resulting in wines with moderate residual sweetness and pronounced acidity—ideal for food pairing.
