Joh Jos Prum was established in 1911 from the division of the original S.A. Prüm estate, with roots in Wehlen, Middle Mosel, dating back to the 12th century. The winery's signature vineyard, Wehlener Sonnenuhr, takes its name from a sundial installed by Jodocus Prüm in 1842. The estate operates 90% ungrafted vines on steep slate soils where phylloxera cannot establish, cultivating Riesling exclusively. The 2023 vintage presented exceptional challenges: a wet spring replenished water reserves following 2022's drought, but explosive spring growth required careful yield management. Dry conditions through May–July created initial concerns, followed by intense mildew pressures from mid-July through August, demanding frequent vineyard work.

Zeltinger Sonnenuhr Spätlese represents the traditional late-harvest expression of this classified site. Manual harvesting from steep cliffsides occurs only after extended ripeness development, with the 2023 harvest beginning mid-September as warm summer temperatures and abundant late-summer rain accelerated sugar accumulation. By early October, some noble botrytis arrived, enriching must composition. Fermentation occurs spontaneously in stainless steel with extended lees aging to preserve the wine's distinctive mineral character and delicate balance. Minimal intervention throughout underpins the house philosophy of expressing terroir rather than winemaker technique.
