Jonata farms an estate in the Santa Ynez Valley of Santa Barbara County, planted on deep, free-draining sandy soils that keep vigour low and yields small. The property grows an unusually broad range of red varieties for the region, spanning Bordeaux and Rhone grapes as well as others, which supplies the components for Todos, the estate's eclectic red blend whose name means 'everyone'. The wine is effectively a portrait of the whole vineyard in a given year. The 2021 season in Santa Barbara was dry and moderate, ripening the various parcels evenly and giving fruit with both concentration and freshness suited to a multi-variety blend built for approachability.

Todos is assembled from many estate varieties, harvested and fermented parcel by parcel so each component can be judged before blending. Fermentations use the estate's fruit across Bordeaux and Rhone types, with maceration managed to give a supple, fruit-forward texture rather than heavy structure. The blend then matures in French oak, using a moderate proportion of new wood over an élevage typically of around eighteen months, before final assembly and bottling. Compared with the estate's flagship bottlings, Todos is made in a more open, immediately generous style, showcasing the range of the site while retaining the savoury, sand-driven character common to all the Jonata wines.
