Tasting Notes

"Our 2025 Chardonnay was sourced entirely from the weathered granite slopes of the Dash Farms vineyard - the same site as our single vineyard offering (to be released later in the year).

 

A slightly longer pressing and ageing solely in  a combination of old French oak and stainless steel has resulted in a beautiful Chardonnay with all the hallmarks of our house style, while also presenting a wonderful drinkability in youth.


Aromatically floral and inviting with jasmine blossom, lemon zest and subtle crushed stone, the palate is focused and precise, with lemon and faint green almond flavours, yet offers lovely concentration of flavour and finely mouth coating texture. Cellar into the medium term or enjoy now in youth."

Critic Scores

It is called Regional Series by the marketing email, though that doesn’t appear on the bottle, but it is distinct from the single vineyard wines that have the single vineyard written on the label. That being said, this is from a single vineyard, Dash Farms, which will also be the named single vineyard on the Single Vineyard chardonnay release. Phew! Joshua Fit the Battle of Jericho!

Delicious drinking. Lemon curd, lemongrass, lemon verbena with dashes of red apple, peach, vanilla and touches of flint with saline minerality. It’s got a nice haze to texture, a gentle and soft flow, a touch diffuse perhaps but refreshing anyways. Perfume rolls out with green apple, green mango, salted cashew and faint clove and herbal lift. Delightful. Everything just so. Good freshness too. Happy days.

Vineyard Cultivation

Joshua Cooper is a Central Victorian winemaker named Gourmet Traveller Young Winemaker of the Year in 2020 and whose label was Halliday's Best New Winery in 2024. This Chardonnay is drawn from the Dash Farms vineyard in the Bendigo zone of Central Victoria, a cool, elevated single site on ancient, stony ground. The lean, mineral character of the wine, often described as tasting as though it were rinsed over stones, reflects that geology and altitude. Cooper farms with a light touch and picks for freshness. The 2025 vintage is very recent, but the region continued to yield fresh, cool-climate whites with bright citrus and white-floral lift over a stony core.

Vinification

The fruit was handled gently and matured in French oak while retaining a clean, mineral-driven line rather than an overtly worked, oaky style. In keeping with Cooper's approach the wine is built through barrel maturation for structure with restrained new oak, wild fermentation and lees contact that add a fine haze of texture without weight. It finishes medium-bodied, focused and refreshing, with bright citrus zest, saline minerality and accessible drinkability in its youth.
