Vinification & Cultivation

Crafted only for our premium wines

Vineyard Cultivation

John Duval established his eponymous winery in 2003 after a distinguished career making Australia's most celebrated wines. The estate focuses exclusively on premium Barossa Valley fruit sourced from exceptional old vineyards within this heirloom-rich region. Eligo sources from carefully selected parcels of mature Shiraz vines, reflecting Duval's philosophy of crafting 'structured and elegant wines from exceptional old Barossa vineyards' rather than replicating conventional regional style. The 2014 growing season in Barossa presented favourable ripening conditions across the vintage window, allowing the region's distinctive old-vine concentration to develop fully. Duval's approach emphasises balance and longevity over immediate opulence.

Vinification

Eligo Shiraz 2014 reflects traditional Barossa handling prioritising fruit quality and structure. Harvesting targeted optimal phenolic ripeness across Duval's selected vineyard blocks. Fermentation employed classical techniques designed to extract colour and tannin without overwhelming the wine's finesse. Oak maturation was carefully calibrated to complement rather than dominate the wine's inherent character, with aging in both seasoned and new cooperage. The resulting wine demonstrates the restraint characteristic of Duval's house style—concentration balanced by elegance, power tempered by precision.
