Steve Pannell is one of Australia's most renowned winemakers, regarded by peers & press as being utterly relevant and forward-thinking, at the same time as serving as a wise older statesman. This fact was celebrated recent when he was awarded Gourmet Traveller WINE Winemaker of the Year.

Koomilya vineyard is Stephen Pannell's own treasured site. He fell in love with it in the mid-1990s- and at this time nearly 25 years ago, he won the coveted Jimmy Watson with a Shiraz build upon a parcel of this vineyard!

In fact, Steve has won the Jimmy Watson Trophy twice now, as well as the prestigious 'Bushing King' title for best wine of show at the McLaren Vale Wine Show the last 3 out of 4 years. Steve is in a purple patch, and we're so glad to be able to sell his wines!

Critic Scores

Native ferment, with 16 days on skins; maturation in a 2300L oak vat. This with a certain succulence allied with tension, a play of sour cherry spiced with caraway, tart raspberry confiture, red plum, haunting warm spices, orange-fruity coffee grounds, umeboshi, dried mint and bitter chocolate, and all feeling of fruit, of place, the winemaking subservient. The fruit swoops in on the palate, expansive but serene, with ripples of texture, tannins extracted masterfully, caressing, savoury but not drying, quietly commanding. Brilliant. 97 points. Black fruit, black tea, black olive, but also has a lilac perfume, and maybe some ginger snap biscuit. It’s full-bodied, dense and ferrous, rolls like thunder on the palate, with superb inky tannin, a twist of iodine, manages to be dry and savoury while offering ample fruit sweetness, some red, some blue, some black, and the finish is very long, with chamois-like tannin stamping it with the seal of high quality wine. A beautiful and distinctive expression of Australian Shiraz. Yes.

Vineyard Cultivation

Koomilya's DC Block represents a single-vineyard parcel of mature Shiraz specifically selected for its age-worthy potential and mineral depth. Located within the Upper Tintara district of McLaren Vale, the DC Block sits on soils where decades of dry farming have concentrated vine character. Stephen Pannell acquired the historic 80-acre property in 2012 and designated three single-block Shiraz wines (DC, JC, and GT blocks) as the estate's signature expressions, each bottled distinctively. The 2021 growing season in McLaren Vale offered stable warmth ideal for Shiraz phenolic development, with dry conditions allowing natural concentration. Pannell's regenerative approach—restoring 3,600+ indigenous plants to surrounding scrub—supports the soil health underpinning the vineyard's classical character. DC Block's designation reflects Pannell's belief that individual parcels deserve singular expression.

Vinification

DC Block Shiraz 2021 follows Koomilya's uncompromising classical methodology. Hand-harvesting targeted optimal phenolic ripeness; fermentation employed spontaneous yeast without temperature control or additives. Extended post-fermentation maceration extracted colour and tannin complexity suited to 30+ years' cellaring. Maturation occurred exclusively in 2700-litre foudres—no new oak at any stage—allowing the vineyard to express itself without oak's influence. This approach contrasts sharply with contemporary Australian Shiraz winemaking, deliberately creating wines that demand patience and storage capacity. The resulting wine reflects Pannell's stated philosophy: wines resembling '1960s McLaren Vale' produced through classical rather than modern technique.

Esteemed by his contemporaries in Australia, Steve Pannell has been named as one of the 50 most influential contributors to the wine world by Decanter Magazine and has twice won Australia's coveted Jimmy Watson trophy - most recently in 2014 for his 2013 Adelaide Hills Syrah. Having produced vintages at Wirra Wirra and Hardy's Tintara before working overseas in Burgundy's Domaine des Comtes Lafon, Bordeaux's Chateau Mouton Rothschild and G.D. Vajra in Barolo.

Pannell's ethos is simple: "I try to create wines that suit our climate and way of life - wines to drink with the food we grow, make and eat in Australia."

The portfolio is based on parcels of old-vine, dry grown Shiraz and Grenache from McLaren Vale and continued to expand to include Nebbiolo, Tempranillo and Touriga Nacional in addition to aromatic whites from the Adelaide Hills. Pannell's preferred winemaking techniques include open fermentation using natural yeasts. By maturing his wines in large format oak, Pannell retains each variety's integrity, showcasing its quintessential characteristics.

South Australia

If you like Australian wine, then you probably like South Australia wine. The rich reds produced there put Australia on the wine-making map of the world. With over 40% of the countries vineyards, South Australia can rightfully call itself the wine state.

Wines are produced in several regions throughout the state, though many are naturally grouped together, like Barossa and Eden Valleys, only 15 minutes apart. They include such regions as Barossa Valley, Clare Valley, Eden Valley, Coonawarra, Adelaide Hills, Kangaroo Island, Langhorne Creek, The Limestone Coast, McLaren Vale and Wrattonbully to name but a few!

Barossa Valley boasts some of the oldest vines in Australia dating back to 1843 and produces some of the world's finest Shiraz, whilst the 'terra rossa' soils of Coonawarra is most suited to producing outstanding Cabernet Sauvignons. If you're a fan of Riesling, Clare Valley is a great place to explore and for a Maritime climate not dissimilar to parts of the Italian coastline, seek out the wines from McLaren Vale.
