Vineyard Cultivation

The Masters Series 'Fred Cress' Shiraz hails from Queensland vineyards, where warm conditions favour Shiraz ripeness and bold fruit expression. The 2006 vintage was a warm, generous year in Queensland — early spring growth progressed rapidly, flowering occurred without frost stress, and summer heat drove rapid colour and tannin development. Rainfall was moderate, supporting consistent vine vigour without waterlogging. Harvest in late February (Australian autumn) captured Shiraz at full ripeness, generating berries with ripe fruit flavour and structured tannins. The large-format (6-litre Imperial bottle) presentation suggests this release was intended for cellaring and evolution, indicating fruit selection for ageing structure rather than immediate appeal.

Vinification

The Fred Cress Shiraz underwent fermentation in large-capacity vessels suited to bulk production, with temperature management to control extraction and preserve fruit character. Extended skin contact during fermentation (20–25 days) developed colour and tannin structure. Following fermentation, the wine matured in large wooden cooperage — likely French or American oak — for 12–18 months, a regime that built richness and secondary flavour without overwhelming the fruit. Malolactic fermentation occurred naturally during maturation. The wine was likely given minimal fining and filtration to preserve structure and texture prior to bottling into the 6-litre format.
